Kathrine has spent over a decade providing the highest level of customer service on numerous yachts up to 185ft. When asked, Kathrine’s strongest quality is the attention to detail and ability to anticipate a clients every need. She has a Bachelor of Science in Nursing from The University of South Florida. Chef Mike's culinary journey ignited during his college days at the University of Illinois at Champaign-Urbana, where he initially pursued a degree in Chemistry. However, the allure of the culinary world captivated him, prompting a transformative switch to the Culinary Institute of America in Hyde Park, New York, where he graduated with distinguished honors.

Embarking on his professional path, Chef Mike's culinary skills were fine-tuned during an externship at Le Bec Fin in Philadelphia, mentored by the esteemed Certified Master Chef Georges Perrier. Post-graduation, he set his sights on the vibrant culinary scene of New Orleans, securing a position at Peristyle under the tutelage of the James Beard Award-winning Chef/Owner Anne Kearney.

Chef Mike's time in New Orleans enriched his repertoire with extensive experience in Cajun and Creole cuisine, complemented by a mastery of French techniques and an in-depth knowledge of cheeses. Returning to his roots in Chicago, he joined the prestigious Michelin Star restaurant Spiaggia as their Formagiaio. Here, he collaborated with the renowned Sommelier Henry Bishop, an expert in Italian wines, further elevating his culinary expertise.

Spiaggia's wood-fired ovens left an indelible mark on Chef Mike, inspiring him to craft his own and pioneer a mobile oven-based catering operation. Chef Mike is now excited to take his talents on board CURRENT $EA, providing guests with an unforgettable culinary experience.
